So I found this recipe for Pumpkin Granola the other day on two peas & their pod and I had to try it. I only had 2 1/2 cups of oats, and I didn't feel like going to the store, so I halved the recipe. I also didn't have cranberries or pumpkin seeds so I used raisins and almonds instead. It turned out really good but got a little dark. Maybe I should have cut the baking time since I halved the recipe?
I mixed it into some vanilla yogurt and it was super yummy. Plus it hid the burnt taste :) and I think it brought out the pumpkin flavor more.
